Elderberry Syrup Recipe - Elderberry Boost Sugar Cookies

Elderberries are known for its great immune boosting properties and as a great cold & flu remedy. Not only is Elderberry Boost good for you, it tastes great too! 

With cold and flu season creeping up on us, there is no better time than now to start incorporating elderberry into your daily regime. My family has been taking a tablespoon each morning but I love finding ways to incorporate it into our meals, snacks, and drinks too! 

Check out these easy to make Elderberry Sugar Cookies below. It is so versatile!  You can use the elderberry glaze on any dessert!

Elderberry Boost Sugar Cookies & Icing

Ingredients: 

Elderberry Cookie Dough

2 1/4 cups all-purpose flour 

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup unsalted butter, softened

3/4 cup granulated sugar

1 large egg, at room temperature

2 teaspoons pure vanilla extract

1/4 or 1/2 teaspoon almond extract (optional)

1 sachet Elderberry Boost Tea

 

Elderberry Cookie Glaze Ingredients: 

Powdered Sugar

Elderberry Boost Syrup

 

Instructions:

1. Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.

2. In a large bowl using a hand mixer, beat the butter and sugar together on high speed until completely smooth and creamy, about 2 minutes. Add the egg, vanilla, and almond extract (if using) and beat on high speed until combined, about 1 minute.

3. Add Elderberry Boost Tea Sachet Ingredients - Yes! Open the tea bag and pour it in. (You can also put these ingredients in a food processor if you want it more fine).

3. Add the other dry ingredients to the wet ingredients and mix on low until combined. Dough will be relatively soft. If the dough seems too soft and sticky for rolling, add 1 Tablespoon more flour.

4. Scoop spoonful size dough balls onto greased cookie sheet about 3 inches apart.

(If you decide to roll out dough and use cookie cutters, chill dough first).

5. Bake for 11-12 minutes (or until lightly browned around the edges) at 350°F.  

 

Elderberry Glaze

In my opinion, the glaze is the best part!  It is easy too! Simply mix Elderberry Boost Syrup with powdered sugar.

Elderberry Boost Recipe

1. Place 1 cup powdered sugar into bowl. Start adding Elderberry Boost syrup to the powdered sugar by the tablespoon. Gradually whisky the elderberry syrup into the sugar until a smooth icing forms. Keep adding liquid until you reach your desired glaze consistency.

2. Once cookies are cooled, place glaze over each cookie.

3. Sprinkle any remaining loose tea onto to the top of the cookie for garnish and added benefits.

** Don't have much time or looking for a more simple recipe? Use any sugar cookie store bought mix. Follow directions according to directions. Mix in elderberry boost loose tea into the dough. Then bake according to directions. Follow the same glaze instructions.
