Recipe Alert - Elderberry Oatmeal Balls
With school season already in swing in some areas, and cold/flu season just around the corner, taking a spoonful or two of Elderberry Boost syrup is a great way to stay healthy. These balls are a great addition for mixing up how you take in our yummy syrup! They are a nourishing snack with a punch of immunity strengthening from the added Elderberry Boost.
Akin to a warm bowl of oatmeal in the morning, these balls are a quick way to get some energy and nutrients. And only 5 ingredients! They are moist, chewy and delicious.
Ingredients
-1 cup of pitted dates
-1 cup of oats
-4 tbsp of almond butter (or other nut butter)
-1.5 tbsp of Elderberry Boost syrup
-a few pinches of salt
(makes about 20 balls)
-
Soak the dates in boiling water (enough to cover over the dates) for 5 minutes (alternatively, you can place dates in water in the microwave for about 1 minute).
-
Strain the dates from the water, and pulse them in a food processor until they blend into small pieces (mushy is okay too!).
-
Add the oats to the dates and blend them together.
-
Put mixture into a medium bowl and add the almond butter, Elderberry Boost syrup & salt. Mix with a fork.
-
Form the mixture into balls with your hands about an inch wide.
-
Enjoy! Store at room temperature for up to a few days or in the fridge for a week.
This seems like a tasty treat. I’m thinking about giving it a try and I have all the ingredients in the pantry!
